
The $1 Egg Fried Rice
A dollar. One single dollar. That's what this costs per person, and it's a complete meal. Egg fried rice is one of the great achievements of budget cooking โ it takes leftover rice that was going to sit in the fridge until it got thrown out, and turns it into something genuinely satisfying in under ten minutes.
What You Need
- 2 cups day-old cooked rice
- 2 eggs
- 2 tablespoons soy sauce
- 1 tablespoon vegetable oil
- 2 scallions, sliced
How to Make It

Heat oil in a wok or large skillet over the highest heat you have until smoking. Add rice and press flat against the pan. Cook without stirring for 2 minutes to get some crisp on the bottom.

Push rice to one side. Crack eggs into the empty space and scramble until just set, then fold into the rice.

Add soy sauce and scallions, toss everything together over high heat for 1 more minute. Taste and add more soy sauce if needed. Serve immediately.
