10-Minute Spicy Peanut Noodles

The peanut sauce comes together while the noodles cook. That's the whole trick. You don't need to make it in advance, you don't need any special equipment, and the ingredients are almost certainly already in your pantry. Ten minutes is not an exaggeration — it's a hard cap.

What You Need

  • 8oz noodles, spaghetti or ramen both work
  • 3 tablespoons peanut butter
  • 2 tablespoons soy sauce
  • 1 tablespoon sriracha, or more to taste
  • 1 tablespoon rice vinegar

How to Make It

    Cook noodles according to package directions. Reserve half a cup of pasta water before draining.

    While noodles cook, whisk together peanut butter, soy sauce, sriracha, and rice vinegar in a large bowl. Add 2–3 tablespoons of the hot pasta water and whisk until smooth and pourable.

    Add drained noodles to the sauce and toss until every strand is coated. Add more pasta water if the sauce is too thick. Serve immediately — top with sliced scallions or sesame seeds if you have them.
