10-Minute Tomato Soup From a Can
Canned tomato soup has a reputation problem. The stuff from the can tastes like the can. But if you treat canned tomatoes as an ingredient rather than a finished product — some garlic, a splash of cream, ten minutes on the stove — you get something that tastes like you roasted tomatoes for an hour. You didn't. That's the point.
What You Need
- 1 can crushed tomatoes
- 2 cloves garlic, minced
- 1/2 cup heavy cream
- 1 cup chicken or vegetable broth
- 2 tablespoons butter
How to Make It

Melt butter in a saucepan over medium heat. Add garlic and cook 1 minute until fragrant.

Add crushed tomatoes and broth. Bring to a simmer and cook 7 minutes, stirring occasionally.

Reduce heat to low, stir in cream, and season with salt and pepper. Simmer 2 more minutes. Blend with an immersion blender for a smooth texture, or serve chunky.
