$2 Fried Rice That Beats Takeout

The secret to good fried rice is not a secret โ€” it's day-old rice. Fresh rice is too wet and steams in the pan instead of frying. Everything else is forgiving. This version costs two dollars and takes ten minutes, and it's better than most delivery fried rice because you're actually using high heat.

What You Need

  • 2 cups day-old cooked rice
  • 3 eggs
  • 3 tablespoons soy sauce
  • 3 cloves garlic, minced
  • 2 tablespoons vegetable oil

How to Make It

    Heat oil in a wok or large skillet over the highest heat you have. It should be smoking before anything goes in.

    Add garlic and stir for 20 seconds. Add the cold rice and press it into the pan. Let it sit undisturbed for 90 seconds to get some crisp on the bottom.

    Push rice to one side, crack eggs into the empty space, scramble them until just set, then fold into the rice. Add soy sauce, toss everything together over high heat for 2 more minutes. Serve immediately.
