3-Ingredient Coconut Rice

Cooking rice in coconut milk instead of water costs about 50 cents more per serving and makes almost everything you serve it with taste meaningfully better. This is the side dish that gets noticed. It's also one of the simplest things in this collection โ€” three ingredients and a basic understanding of rice.

  • 1.5 cups jasmine rice
  • 1 can coconut milk, full-fat
  • 1/2 cup water

How to Make It

    Rinse rice in a fine mesh strainer under cold water until the water runs clear โ€” about 1 minute. This removes surface starch and prevents gummy results.

    Combine rinsed rice, coconut milk, water, and a generous pinch of salt in a saucepan. Bring to a boil over high heat, then immediately reduce to the lowest possible simmer and cover tightly.

    Cook undisturbed for 18 minutes. Turn off heat and let steam, still covered, for 5 more minutes. Fluff with a fork.
