Every pancake recipe calls for flour, sugar, baking powder, milk, eggs, butter, vanilla, and a pep talk. Three of those ingredients get you a real pancake โ€” not a compromise, not a diet version, a stack you'd be happy to order at a diner. Banana, eggs, and oats. It blends in one bowl, cooks in a few minutes, and saves the morning.

  • 2 eggs
  • 1 cup rolled oats

How to Make It

    Throw everything in a blender with a pinch of salt. Blend 30 seconds until completely smooth and thick โ€” stop and scrape down the sides once.

    Heat a nonstick skillet over medium-low heat. Add a thin swipe of butter or oil. Drop batter in 1/4-cup portions โ€” they spread naturally.

    Cook 2 minutes until bubbles form on the surface and the edges look set. Flip gently and cook 90 seconds on the second side until golden and cooked through. Keep warm while you cook the rest.

    Stack, top with syrup, berries, or peanut butter. Eat immediately โ€” these don't hold the way traditional pancakes do.
