4-Ingredient Avocado Toast (Done Right)
Avocado toast has absorbed a lot of cultural baggage for what is ultimately a very good thing to eat. Done right โ properly seasoned avocado, good bread, a fried egg on top โ it's a complete meal. Done wrong it's a sad green smear. The difference is almost entirely salt and acid.
What You Need
- 2 slices sourdough or thick bread, toasted
- 1 large ripe avocado
- 1 lemon or lime, juice only
- 2 eggs, fried
How to Make It

Halve and pit the avocado. Scoop flesh into a bowl with the citrus juice and a generous pinch of salt. Mash with a fork to your preferred texture โ some people like it smooth, most prefer it chunky.

Toast the bread until deeply golden and crisp all the way through.

Fry the eggs in a little butter or oil. Spread avocado on toast, top with a fried egg, and finish with flaky salt and red pepper flakes if you have them.
