4-Ingredient Banana Oat Pancakes
These are not a sad health-food substitute. They're genuinely good pancakes that happen to have no flour, no butter, and no sugar. The banana does all three jobs. Ripe bananas — the blacker the better — are the entire point here.
What You Need
- 2 ripe bananas
- 1 cup rolled oats
- 2 eggs
- 1 teaspoon baking powder
How to Make It
- 1
Blend all four ingredients together until smooth — a regular blender or an immersion blender both work. Let the batter sit 2 minutes while your pan heats up.
- 2
Heat a non-stick pan over medium-low and add a small knob of butter or a spray of oil. Pour batter into small rounds (about 3 inches wide) — these are more fragile than regular pancakes so keep them small.
- 3
Cook until bubbles form on the surface and the edges look set, about 3 minutes. Flip carefully and cook another 2 minutes. Serve immediately with whatever you have — maple syrup, fresh fruit, or nothing.
