4-Ingredient Pad Thai Noodles
This is a stripped-down pad thai that captures the essential character of the dish without requiring 15 ingredients and a trip to a specialty store. It won't win any competitions, but it will get dinner on the table on a Tuesday night when you have rice noodles, eggs, fish sauce, and sugar.
What You Need
- 200g rice noodles
- 3 eggs
- 3 tablespoons fish sauce
- 2 tablespoons sugar
- bean sprouts and lime to serve
How to Make It

Soak rice noodles in cold water for 30 minutes until pliable. Drain.

Heat oil in a wok or large pan over very high heat. Add noodles and toss for 2 minutes. Push to one side of the pan.

Crack eggs into the empty side and scramble until just set โ about 30 seconds. Fold into the noodles. Add fish sauce and sugar, toss everything together over high heat for 2 more minutes. Serve topped with bean sprouts and lime wedges.
