
5-Ingredient Lentil Dal
Dal is one of the most satisfying things you can make for under two dollars. Red lentils dissolve into a thick, golden, spiced porridge that eats like comfort food. This version has five ingredients and takes thirty minutes. Serve it over rice or with flatbread and it becomes a full meal that punches well above its weight.
What You Need
- 1 cup red lentils, rinsed
- 1 can coconut milk
- 2 cups water
- 2 teaspoons curry powder
- 1 large onion, diced
How to Make It

Cook onion in a generous pour of oil over medium heat until soft and golden, about 10 minutes. Add curry powder and stir for 1 minute until fragrant.

Add lentils, coconut milk, and water. Bring to a boil then reduce to a simmer. Cook uncovered for 20 minutes, stirring occasionally, until lentils are completely dissolved and the dal is thick.
