5-Ingredient White Bean Soup That Tastes Like It Simmered All Day

There's a particular kind of soup that tastes like someone's Italian grandmother spent the afternoon hovering over a stove. This is that soup. Except it takes 35 minutes and uses things you probably already have.

What You Need

  • 2 cans cannellini beans
  • 4 cloves garlic, sliced thin
  • 1 can crushed tomatoes
  • 4 cups chicken broth
  • 3 tablespoons olive oil, plus more to finish

How to Make It

    Warm olive oil in a heavy pot over medium heat. Add garlic sliced thin and let it go slow โ€” you want it golden and fragrant, not brown and bitter. About 3 minutes.

    Add crushed tomatoes and let them cook down for 5 minutes, stirring occasionally. The oil will turn a deep orange.

    Pour in the broth and both cans of beans, liquid and all. Season aggressively with salt. Bring to a gentle boil then reduce and simmer 20 minutes.

    Use the back of a spoon to crush about a third of the beans against the side of the pot. Finish with a serious drizzle of olive oil.
