- 4 eggs
- 1/4 cup cottage cheese
- 1/2 cup shredded cheese, cheddar or gruyere
- 2 tablespoons milk
- 2 tablespoons chopped chives or spinach, optional
How to Make It

Whisk eggs, cottage cheese, milk, salt, and pepper in a blender or with a fork until smooth.

Grease a silicone muffin tray (or 4 small ramekins). Pour egg mixture into wells until 3/4 full. Scatter cheese and chives on top.

Microwave on high 2–3 minutes, checking at 2 — they'll puff dramatically and deflate when done. Let sit 60 seconds before serving. Refrigerate leftovers for up to 5 days.
