5-Minute Salsa Verde
Salsa verde is the kind of sauce that makes everything taste like it came from a restaurant. Grilled chicken, roasted vegetables, eggs, fish, sandwiches, tacos — everything is better with a spoonful of this. It takes five minutes, keeps for three days in the fridge, and is built from things you might already have.
What You Need
- 1 cup fresh parsley or cilantro
- 2 anchovy fillets, or 1 tablespoon capers
- 1 clove garlic
- 1 lemon, juiced
- 1/2 cup good olive oil
How to Make It

Combine herbs, anchovies or capers, and garlic in a food processor. Pulse a few times until roughly chopped.

Add lemon juice and olive oil. Pulse again until you have a coarse, scoopable sauce with some texture remaining — not completely smooth.

Season with salt. Taste: it should be bright, salty, and herbaceous. Adjust lemon and salt as needed. Keeps in the fridge for up to 3 days.
