Baked Oatmeal for the Week

Baked oatmeal is the solution to the most common breakfast problem: you want something warm and filling but you don't have time to make it every morning. Make this once on Sunday. Eat it all week. It keeps in the fridge for five days, reheats in 90 seconds, and costs less than a dollar per serving.

What You Need

  • 3 cups rolled oats
  • 2.5 cups whole milk
  • 2 eggs
  • 1/3 cup maple syrup or honey
  • 1 tsp each baking powder, cinnamon, and salt
  • 1.5 cups fruit of choice, blueberries, sliced banana, or diced apple

How to Make It

    Preheat oven to 375°F. Grease an 8×8 baking dish.

    Whisk together milk, eggs, and sweetener in a large bowl. Add oats, baking powder, cinnamon, and salt and stir to combine. Fold in fruit.

    Pour into the baking dish and bake 35 minutes until the top is golden and set. Let cool at least 20 minutes before cutting — it firms up as it cools. Slice into portions and store covered in the fridge for up to 5 days. Reheat individual pieces with a splash of milk.
