Greek Yogurt Flatbreads (No Yeast, No Rise)

Two-ingredient flatbread sounds like something that should taste like cardboard. It doesn't. Greek yogurt and self-rising flour produce a soft, pliable flatbread that puffs in the pan and tastes genuinely good. No yeast, no rising time, no anxiety. Ready in fifteen minutes.

What You Need

  • 1 cup self-rising flour, plus more for dusting
  • 1 cup Greek yogurt, full-fat works best

How to Make It

    Mix flour and yogurt together until a dough forms. It will be sticky — that's correct. Turn onto a floured surface and knead briefly, about 1 minute, until smooth.

    Divide into 4 pieces and roll each one out to about 1/4 inch thick.

    Cook in a dry skillet over medium-high heat for 2–3 minutes per side until puffed and charred in spots. Brush with butter or olive oil right off the pan.
