Microwave Mug Mac and Cheese
This is not a consolation prize. Mug mac and cheese made properly — the right pasta-to-water ratio, real cheese, a splash of milk — tastes like mac and cheese. It takes five minutes. It produces one serving with one mug and one fork to wash. For the record, this is a feature, not a bug.
What You Need
- 1/3 cup elbow macaroni
- 1/2 cup water
- 3 tablespoons milk
- 1/4 cup shredded cheddar
How to Make It
- 1
Combine macaroni and water in a large microwave-safe mug. Microwave on high for 2 minutes. Stir, then microwave another 1–2 minutes until pasta is cooked and most of the water is absorbed. Some water remaining is fine.
- 2
Add milk and cheese. Stir vigorously until the cheese melts and the sauce comes together. If it's too thick, add a small splash more milk.
- 3
Season with salt and pepper. Eat immediately — it thickens fast.
