No-Bake Cheesecake in a Glass
Regular cheesecake involves a water bath, a springform pan, a 90-minute bake, and a very specific cooling process designed to prevent cracking. This version involves a glass, a spoon, and fifteen minutes. It tastes like cheesecake because it is cheesecake — just without the part that makes you anxious.
What You Need
- 8oz cream cheese, softened
- 3 tablespoons powdered sugar
- 1 teaspoon vanilla extract
- 6 graham crackers, crushed
- 2 tablespoons butter, melted
How to Make It
- 1
Mix crushed graham crackers with melted butter until it resembles wet sand. Divide between 4 glasses and press down gently to form a base.
- 2
Beat cream cheese, powdered sugar, and vanilla together until smooth and fluffy — an electric mixer is fastest but a fork and patience works too.
- 3
Spoon or pipe the cream cheese mixture over the crusts. Refrigerate at least 1 hour. Top with fresh berries, jam, or nothing before serving.
