One-Pan Taco Pasta

Everything you love about Tuesday tacos, in a bowl of cheesy pasta, in under thirty minutes, in one pan. Dangerously easy to double.

What You Need

  • 1 lb ground beef
  • 1 packet taco seasoning, or 2 tbsp homemade
  • 1 can diced tomatoes with green chiles, 10oz, Rotel
  • 2 cups beef broth
  • 8oz rotini or penne
  • 1.5 cups shredded Mexican cheese blend
  • 1 onion, diced

How to Make It

    Brown beef and onion in a large deep skillet over medium-high, 6 minutes. Drain fat. Stir in taco seasoning and tomatoes, cook 60 seconds.

    Add broth and pasta. Stir, bring to a boil, reduce heat and cover. Simmer 12 minutes, stirring once, until pasta is tender and most liquid has absorbed.

    Kill the heat. Scatter cheese on top and cover 2 minutes until melted. Top with scallions, jalapeños, or a dollop of sour cream.
