One-Pot Cajun Chicken Pasta

Chain restaurant Cajun pasta, made at home, in one pot, for a third the price. Spicy, creamy, and good enough that you'll stop ordering it out.

  • 1 lb chicken breast, cubed
  • 2 tablespoons Cajun seasoning, divided
  • 8oz penne
  • 2 cups chicken broth
  • 1.5 cups heavy cream
  • 1 red bell pepper, sliced
  • 1/2 cup grated parmesan
  • 3 cloves garlic, minced

How to Make It

    Toss chicken with 1 tablespoon Cajun seasoning and salt. Heat a deep skillet or Dutch oven over medium-high with a tablespoon of oil. Sear chicken 4 minutes per side until cooked through. Remove.

    Drop heat to medium. Add bell pepper and cook 2 minutes. Add garlic and remaining seasoning, stir 30 seconds.

    Pour in broth and cream. Add pasta. Stir, bring to a simmer, cover, and cook 12 minutes until pasta is tender. Stir in parmesan off heat until glossy. Return chicken and toss.
