Sheet Pan Eggs for a Crowd
Making eggs for more than two people is one of cooking's more annoying logistics problems. You can't fit twelve fried eggs in a pan at once, scrambled eggs for eight requires constant stirring, and poached eggs for a crowd is a full-time job. Sheet pan eggs solve all of this. Crack everything onto a sheet pan, slide it in the oven, walk away.
What You Need
- 8 eggs
- 1/2 cup heavy cream
- 1 cup shredded cheese, cheddar or gruyère
- 2 tablespoons butter
How to Make It
- 1
Preheat oven to 350°F. Butter a rimmed sheet pan or baking dish generously — every corner.
- 2
Whisk eggs and cream together with salt and pepper. Pour onto the sheet pan. Scatter cheese evenly over the top.
- 3
Bake 15–18 minutes until the eggs are just set — they should have a slight wobble in the center when you shake the pan. They'll continue cooking from residual heat. Slice into squares and serve immediately.
